Salute to Ice Cream Sandwiches

You don’t have to be a kid to enjoy a good ol’ fashioned ice cream sandwich. August 2 marks this year’s National Ice Cream Sandwich Day. At Persephone Bakery, we salute any day devoted to sandwiching ice cream with cookies!!

Our mini Chocolate Chip Cookies and mini Double Chocolate Walnut Cookies to make the perfect vessels for making your own ice cream sandos at home. To celebrate National Ice Cream Sandwich Day, we’re walking you through how to construct your own at home with our friend and interior designer Emily Janak (and her pup Finn) in her newly kitted out guest house kitchen.

Start with either Persephone Supply mini Chocolate Chip Cookies or mini Double Chocolate Walnut Cookies. (PS, our Double Chocolate Walnut Cookies are naturally gluten-free!)

Slice your minis in half.

Scoop slightly defrosted ice cream (we love MOO’S from Jackson Hole) on a bottom cookie half.

Sandwich with your mini top.

Protip: if you really want to impress, roll the sides of your ice cream sandwich in a sprinkles.

Once you’ve got your sandwiches filled, re-freeze for at least an hour and then enjoy!
